Okie then lets make a list of choices:
a) She kepts being a nun
b) She ends with Asou (BUHHHH!)
c) She run away with Nishimoto mainly to become his p*** star in movies like the rebel nun (adult version) and all that jazz.
Sara has shown some signs of being attracted to Yakumo, though they do seem to be only in joking(chapter where Yakumo plays the bride for the brochure for Sara's church is one example).
Despite lesbian nuns being totally hot, I don't think Kobayashi is going to have Yakumo start a relationship with Sara. Yakumo's problem in the manga is her difficulty in starting relationships with men, and there wouldn't be a resolution to that problem if Yakumo suddenly became a lesbian near the end of the series.
Also, Sara can do multiple things on that list at the same time. For example, she could still be a nun while working at a Chinese restaurant with Asou, and open an orphanage at the same time.
