the only difference in the 2 versions are the characters u can unlock, stylish silver has the characters from Seigaku, hyotei(even their coach), fudomine(even An Tachibana), Rokaku, and u can also unlock the dude who stole one of Inui's special juices and got him and his team poisoned, the Glorius Gold characters include Seigaku(even Ryuzaki Sakuno), St. Rudolph, Yamabuki, and Rikkaidai the other hidden characters is the captain of Midoriyama, and Nanjiroh Echizen

when the gauge is full, what do u press? and why isn't ryoma doing twister serve?
well basically when doing their special moves u have to make sure that your gauge meter fills in the requirements of certain moves(such as echizens twist serve), now when u have the gauge filled to a certain degree u can do a special move by holding the L and R buttons then by pressing either the A, B and for some players even the SELECT button, now u may have notice that theres another gauge in the game(the one colored yellow) if this fills up and when u hold the L and R button followed with the START button your character will be able to their specials continueously for a certain amount of time(it depends mostly on some characters) but lastly since we are using an emulator try to make sure that your keyboard settings is compatible with the game, its because some keyboards dont allow u to press 2 or 3 keys at the same time so try to make sure to look for the right settings for your emulator
