Oda made it very clear : it is not because "they can't swim, period.", but because a DF user surrounded by water becomes weak, and the more he is submerged the more he weakens. Of course when someone (with DF or not) is too weak, he can't swim, and thus sinks (if his body doesn't prevent him from sinking of course !).
THAT is the rule of DF in water, not "you can't swim" nor "you can't float".... ~
So, depending of what Oda told us about DF properties, we can assume a boat wouldn't sink, for 2 reasons :
- water doesn't affect it a lot because most of a ship surface is not in contact of water ===> the boat wouldn't be weakened too much ;
- even if the boat was too weak, why should it sink ? its shape naturally prevents it from sinking, so it wouldn't.
