She didn't say it couldn't be healed, she said that medical jutsu can't heal every injury (or something to that effect, all the translations agree on that).

What Itachi says doesn't necessarily have to be the truth, he could be lying or he might not know what would happen. How many people has had a transplanted sharingan anyways?

We don't know enough about medical ninjas to know the exact criteria, and they're just one family, they focus on their clan jutsu, just like the other clans, and those jutsu happen to be very effect offensive and defensive jutsu.

The contract is sealed in the blood, and in Orochimaru's case, the seals on his arms might have something to do with too, that's why Kabuto drew his hand across Orochimaru's arm.

i dont think remembering would help sasuke move fast, especially at rock lee's speed. im sorry but im going off on a limb here haha so correct me if im wrong, i might be wrong but oh well. even with the sharingan i dont think kakashi or sasuke could of used it. the sharingan cant mimic or see through tai-jutsu, well i think thats the case with sharingan and tai-jutsus.

^ It can, it was specifically mentioned that the sharingan works with nin/tai/and genjutsu the chapter that it was introduced. And he did get an opportunity to see Lee fight, that's how he developed Shishi Rendan. He didn't copy the speed though, that something he trained for (and again, it's not same as with Lee, he's using chakra to power his movements, like with body flicker).

^ yeah, basically sasuke did become faster just training with kakashi. its believable. i just wanted more clearification on the sharingan, haha its been so long, cant remember everything XD. isnt there a flaw with the sharingan against tai-jutsu? not the mangekyou. didnt rock lee or sasuke say that the sharingan cant see through tai-jutsu? i know its probably not related to anything but i just want clearification.

^ Lee said that his body was incapable of following it. It doesn't really help to have the sharingan in that situation.

Another plothole:
1.Sandaime cut Orochimaru's spirit's hands. he should be able to move his arms even though he switches body since the death god took his arm with him...

^ We don't know exactly how that jutsu works, and how it'll interact with the body switch that Orochimaru uses, after all the original owner of the body is still around, trying to discuss something like concept of a soul in the context of a fictional world doesn't make any sense.

Sharingan can copy ninjutsu, genjutsu, taijutsu. The sharingan can see taijutsu, which was how Sasuke copied lee's omote renge* (im not sure, but I think this was it, the initial lotus). The problem is that the body needs to be as fast as the technique.

^2: His hands weren't cut but sealed. I don't want to get into guessing how the jutsu works, but they were sealed. What I can't understand is how Tsunade was suppose to be able to heal this, since it isn't a wound. But as ^ said, it's futile.

yeah sharingan can copy tai-jutsu, well in the anime not in the manga. kakashi used initial lotus in Shippuuden.
