Easy. The X-men cartoon from the 90s, mainly because of it's face melting theme tune (technically this counts as it's not an anime).

I've always liked House's opening, as well as Dexter's.
don't watch much TV myself, and the few shows i have watched didn't really have great openings =\ though, looking at this thread so far, i'd have to agree with SD's choice
