Do animated movies count? If so I'd say my favourite is Rurouni Kenshin: Tsuiokuhen(director's cut).

Non-animated... I dunno, there isn't anything I particularly like over everything else. Maybe The Return of the King.

Most of my favorites have already been listed:
-My Sassy Girl (kr): The Hollywood ripoff of it was such a horrible insult to the original movie.
-Infernal Affairs series(ch): Same statement as above.
-Young and Dangerous series (ch): If Hollywood dares to make a version of this, I'll cry. It's mostly about the hardships of the Hong Kong mafia, dealing with from deaths of close friends to politics. A Chinese version of the God Father if you will.
-Love on Diet (ch): Another love comedy that is very original and hilarious. [Fatty: I don't need you anymore Angelina Jolie!!]

Stephen Chow movies: He directed and acted in so many that he gets his own list.
-A Chinese Odessy 1 and 2: A nice parody of the epic Journey to the West.
-Kung Fu Hustle and Shaolin Soccer: People already mentioned and it's been dubbed in English for the world already. No more needs to be said.
-Flirting Scholar: Requires a good understanding of Chinese to get some of the jokes because they're hidden in poems. Still, plenty of jokes that are simply universal, so fun for all.
-King of Comedy: A bit more dramatic than the title leads one to think, but it was still pretty damn good. If you don't like the story, it's worth watching simply for the scene where Chow does many facial expressions.
So many more to list... My all time favorite comedy director and actor.

Yeah, pretty much all the ones I've listed are in Chinese, but they all also have english subtitles available. The ones I've bolded are ones I highly reconmend people watch.

    Good Times

My favorite thus far is still Yojimbo. There's something about the accumulation of all the different twists and nuances in the plot and the characters dialogues that just... it just leaves a good impression on me.

Laskar Pelangi (en: The Rainbow Troops)

It's an Indonesian Movie adapted from Andrea Hirata's best seller novel.
It's a story about the struggles of 10 poor children to get proper education.
Well, I'm not good with words, so just read the complete review here.

Btw, the novel itself was adapted from Andrea's childhood memory.
The main character (Ikal) represents little Andrea.
