Wonder if Akamatsu did the 8000 just because of the 9000 fad (wants Eva to be OVER 9000!!!!!). he could have chosen any number over 3000, why 8000?

Well, we know Eva is powerful, but one of the points Racan just made was that a weaker opponent _can_ take down a more powerful one, depending on the circonstances, the environment, or the level of preparation. Remember Nagi taking Eva down using a pit trap?
So her freezing the 8000 demon doesn't necessarily mean she's over 8000, though it is still possible.
As for her being "immortal", that doesn't make her invulnerable. It just means she can't be killed by purely physical means, and can regenerate fast, as she said so herself. I can very well imagine a vampire being magically bound, then incinerated, for example.
That is, if someone doesn't figure out a way to reverse her vampiric condition first.
Eva isn't just power. She's got ages of experience, and a lot of people tried to kill her.
Besides, were her power lower than 8000, Racan would've sure put her on the list.
As for releasing her vampire condition, it will probably require one to know how she became a vampire. And that ritual is supposed to be lost.
