What about the flashbacks in Cowboy Bebop? Or the Rurouni Kenshin OVAs?
Generally-speaking, I would think any anime featuring a Character With A Mysterious Past would benefit from flashbacks, provided they are executed correctly. Starting the narrative in media res is almost a standard film technique nowadays.
