and you should read Claymore. (its not excessively violent and bloody but i dont think you'll make a mistake reading it)
Totally bloody: Higurashi no Naku Koro ni (I don't know if there's a manga of it though).
Theres also Shigurui, Koroshiya Ichi (ichi the killer) and Gantz.
Maybe Zetman to add to the pile, since most titles were already mentioned.
don't forget Ebichu, there are tons of blood and violence ! :D
And Elfin Lied.
Suicide Circle, Agharta, Eden, and Majin Devil.
