2-5 volumes - a single sitting meal
6-10 volumes - about the size of a novel
dozen+ volumes - something I can chew on
at least a couple dozen - anything less and things are just getting started

You're right, whoever it was who first pointed out that different genres tend to work best at different lengths. I tend to prefer my romances in the 6-10 range -- tho' again, my favorite romance is 12 volumes long (and if you count YKK as one, that's 14). I tend to get tired of adventures, though, after about two dozen volumes.

For epic stories, I'd say a couple dozen minimum (Berserk, Gantz). For romance manga, 15 volumes or so (I''s, Video Girl Ai). Of course, I prefer short manga with good arcs (Jiraishin, Basilisk, Battle Royale, etc.) rather than long manga with repetitive arcs (One Piece).
Obviously: Infinite, but well, since no author would be good enough to not make such a manga boring, it's a kind of stupid question.
If you're keeping authors in mind when asking that question then I would say about 20.
voted 6-10 before reading everyone's opinions. longer than that, it becomes a bit torturous (at least for me):
on one hand, you don't want to put it down after coming so far, you really want to see what happens to the characters; on the other hand, you just know it's not going to end anytime soon, and you've seen all the mangaka's tricks.

It really does depend on the series.
Sanctuary is 12 volumes, Strain is 5. Both are perfect lengths for those respective series. The same goes for Monster, at 18.
20th Century Boys is at like 24, and it feels (at least to me) like it should have ended a while ago.
Gantz and Berserk are still going strong...Gantz is in the 20's, Berserk in the 30's. I question, though, why Futari Ecchi continues to exist in the 30's.
Naruto and many of the other Shonen Jump manga have continued for far too long. Even Death Note, I would say, overstayed its welcome.
There is no magical length.
It really just depends on how good the story is.

it depends of the serie. if it's good i'd say 20-30 but if i dislike it 10 is already too much.
the never ending serie can be boring, though i like one piece, eyeshield, bleach.
