Mustang vs. Envy rocked, though I expected Envy to last longer before he spat out his foetus considering how many Philosopher's stones he absorbed. But what was that last part with everybody ganging up to save him? I was serously expecting him to be finished off this time. If they let him live again sooner or later he'd find another Philosopher's stone just like before.

There a confusing issue with this chapter. That is to say Mustang has killed countless people in battle, as well as a homunculus woman at point blank, and is faced with the murderer of his own best friend. This "man" he's facing started a war through deception by killing a child, while he was disguised, that ultimately led to a near-genocide. This "man" kills human beings all the time with no hint of remorse and a degree of sadistic pleasure.
Exactly where is the problem suppose to arise with him killing Envy? This isn't like a random person hunting down a murder and killing them outside of the law. This is a battle hardened man on a battlefield killing an opponent who will never stop killing as long as it doesn't die.
It just seems odd now, almost contradictory to the entire story thus far, to suddenly turn against the idea of allowing one warrior to kill a monster. Particularly in the case of Riza who wouldn't have hesitated to shoot Envy in the brain even if she didn't know he had multiple lives.
I don't see any problem in losing composure. His "game" went down, he was pushed to the corner over and over, all his tricks wasted. Not everyone is kool and the gang every moment.
I'm pretty sure it's a matter of psychology. Killing Envy purely out of emotion would have a lot of negative after-effects on Mustang. He would shell up even more, talking to other people about his problems would be harder. He might start hesitating the next time he is required to kill. He would also start to develope a fear for himself. All these things come up when one realizes that one acted purely out of control.

pretty much agree with what Skrymir said - the problem isn't with killing Envy, but Mustang killing Envy purely out of revenge and emotion. They don't want him to do that. FMA had - since the beginning - made revenge one of its anti-themes, so it definitely isn't contradictory to the story.
as for the chapter itself, not much to say besides mustang and hawkeye were badass =)
I also agree with this. This is precisely what the author was going for. Im assuming when they continue that scene, Mustang will demand him, take envy, then do something noble with him, like trap him in a pipe or something.
