As I am a big fan of plesant, slow paced short stories and One Shots, like Position from Ashinano Hitoshi, I wonder if somebody knows a few of them (Of course I would be happy about tips on longer stories of that kind, like YKK, as well).

Well, also take a look at Cabu no Isaki (Isaki's Cub, as in Piper Cub) also by Ashinano.

Hmm... Well, most of Mitsuru Adachi's short stories are pretty slow-paced and enjoyable. Check out his Anthologies Volume 3, and the Short Program series.
... I was also about to suggest 24 Colors (which can be found here), but that could be a little fast-paced, even though it's just a 1-volume story. ARIA and AQUA too, if you haven't already tried them.

Aria/Aqua I know of course (but it really does have the pace I like), the others I will try.
