Moribito, would be the name of that last one.
Today is always the most enjoyable day. Just ask Yotsuba.

Bamboo Blade: its about a high school kendo club
Ikkitousen and Tenjou Tenge: tons of fighting, but the story is pretty terrible.
    Air Master
Canaan: not so much fight anime as awesome movie style fight sequences. Think Chow Yun-Fat and John Woo.
Kara no Kyoukai: goes to show that not everything type/moon sucks donkey nuts when its made into anime.

Since, I assume, you enjoyed Moribito, might you like to try Guin Saga and The Twelve Kingdoms. Both are really more fantasy than anything else but they are good. A note about 12 kingdoms: when you get sick of that bitch Yoko, and you will, don't drop the show. It gets better.

Lol. Ranma 1/2. That's got martial arts anything.

Samurai Champloo, perhaps? And some of the boxing anime (Hajime no Ippo comes to mind) might be worth looking into.

Rurouni Kenshin (in its various forms)

    Wow, that takes me back.

Not exactly practical fighting, and they spend more time talking about fighting than actually doing it, but it's pretty decent even plot-wise.
