*rubs hands* This is exactly the sort of task Dizzy and I like.
Let's start with the complete series of Mitsuro Adachi. Which is of course way too much to take it, but start with Rough -- which is 10 volumes, and entirely typical of his works and so a good starter series. It's a low-key romantic comedy sports series, where in this case the hero is a swimmer and the heroine is a diver, they being from rival families in the confectionary business. If you like that, go on to Touch, H2, and the ongoing Cross Game, which are all baseball series that I adore even though I don't like baseball at all, and all masterpieces of manga storytelling.
Next, pinging off Fruits Basket in another way, you probably want to try Penguin Brothers (warning: no actual penguins, dammit) and Land of the Blindfolded. The former is a school romantic comedy focused more on the school cliques than the romance, and the latter is a school romantic comedy with psyonics. Possibly also Yurara (aka Yurara no Tsuki), school romantic comedy with exorcists.
If you're up for something older, as in romantic comedy out of school and into grown-up life stuff, Living Game and Tramps Like Us/Kimi wa Pet (that last is a single series with different English/Japanese titles).
And just to round things off, the most grown-up, mature series I know (as in, it's Aishizura Baby after graduation, only better), try Yotsuba&!. Really. You will not regret it.
