Hmm... I don't know many oneshots in the genres you specified, but I do have a couple of short story anthologies that are worth reading:
Eat-Man is a collection of stories about Bolt Crank, the World's Greatest Mercenary, who can eat anything and make it reappear from any part of his body... including all sorts of guns. Each chapter is usually Bolt or one of his friends on a different mission, and almost all of them feature some sort of twist at the end.
Salad Days is a collection of short stories about love and romance - usually of the high school variety, but including elementary school all the way to adults. Each story is usually 1-2 chapters long, and cover all themes and aspects of love - love rewarded, love forgotten, love betrayed, love triumphant, first love, old love, new love, lost love, etc. Probably the best anthology of romance stories in manga I know of.
Also, Rumiko Takahashi's Rumic World has some dark/spiritual stories, and Mitsuru Adachi's Short Program has some stories about youth.-Dizzy-
