    I'd have to say that Appleseed (the movie) has the greatest fight scenes. Cowboy Bebop too has some good fight sequences. But in anime, I'd say Ghost in the Shell has the best fights.

    Yu Yu Hakusho had some of the best. In my opinion, Hiei and Yusuke had the best fights over the entire anime, specially the Yusuke fights against Toguro and Sensui. In this last one, I enjoyed the part when Raizen takes over Yusuke's body and... well, simply the best one minute spanking in an anime!


    Another ones that no one mentioned are the Rurouni Kenshin fights, but only the Shishio Saga.


    Samurai Champloo also has some good ones, specially the Mugen fights.

    ^I was just about to mention Rurouni Kenshin aswell. If you're looking for some kick-ass samurai-style fights, then definitely check it out.

    There are some decent fights before the Shishio/Kyoto Arc, but yeah, it's not until Saitou shows up in Tokyo that it really gets cool. There are only some pretty crappy fillers after Shishio. Personally, I found a couple storylines enjoying but there are no spectacular fights.

    But if you decide to carry on with the manga, there's still the Jinchuu Arc. (I thought the fights with Enishi were nearly as good as the one with Shishio )

    I whole heartedly agree with everything I've read here so far, so instead of repeating them I'll simply say something completely different.

    People are going to hate for me this; but I'm gonna say it. If you can get over general anti-fandom and the bias of overexposure, or you've just never taken the time to actually watch it...

    More so, If you don't mind a completely gravity-free, energy beam using, super-naturally large scale ultimate fight. - then by all means try even a little scene of Dragonball Z. It specifically had at least three really well done fights; particularly when they are edited down for Music Videos, which will be the medium I'll show them in below.
    Excuse the Youtube-esque video quality on the embedded videos; I use these because they are, by far, the best I've found of general fighting - I'd even go so far as to say it's like watching gods fight. That said, I recommend you watch them without expanding.

    Vincent Volaju against Spike Spiegel in the Cowboy Bebop movie, Knocking on Heaven´s door.

    That is the best animated fight scene in anime ever.

    there are good parts to DBZ yes... but it's far outweighed by the amount of crappy parts (lol 5 minutes on Namek). i mean, would you really recommend watching the entire DBZ *series* to someone ?

    those fights look good because people took time to condense them, and they don't last forever.

    There is another thing that hasn't been mentioned specifically; once again it's just a part, such as with DBZ above; but the Greed versus Edward fight from FullMetal Alchemist is worth a look if you're looking for incredible scenes, not entire shows full of nonstop quality action.
