I like Iwanbo from Rurouni Kenshin a lot. I think he looks hilarious, but nobody else even mentions him.

Haha, deadpool is indeed great. As for my favorite underappreciated character, it would be every harem anime's main character, these men, though spineless and depressed, are my brothers in arms. Ok well no, even if I'm told I resemble a harem anime's main character out of his element, that's not my real choice.
Underappreciated character? Well right now I'm watching Jigoku Shoujo, so I vote for that Investigator/Reporter who is trying to find out more about her and the cases.

Usopp is actually pretty underappreciated. It's just that right now, everyone is wondering what will happen to his fighting skills since the big argument about Going Merry. That's the only reason he's put up there with Luffy and Zoro. So don't hate him for what he can't control, he's a good character, and not as much of an attention whore as everyone thinks.

Not so much underapreciated but more under used, is Mutsumi from Love hina, she could have played a much bigger role in the manga (I say this 'cos she was my fav character).
Actually there are a lot of anime and mangas where characters are criminaly under used, but ATM Love Hina is the only one that springs to mind.

in yakitate japan, it will be azuma kazuma's grandfather.. because all the info and learnings azuma has is originally from his grandfather. at the same time, he's one reason why azuma came up in making japans..
i think granpa can be considered as his best ally too aside from kawachi and suwabara.. though grandpa is not there beside him in competitions, his influence is what makes azuma a great bread artisan. ^_^
